Laura’s stupid easy prime rib recipe

This year, we abandoned the Turkey and went for prime rib. It was so easy and so delicious and I have my friend, Laura, to thank. Everyone needs a friend who is a chef. :)

Ingredients

  • 5 lb boneless or bone-in prime rib (For boneless, I would go for about 0.5 lbs per person and a couple extra for leftovers)

  • Salt and pepper 

Preparation - a day ahead

  1. Season with salt and pepper and refrigerate  prime rib uncovered in the refrigerator . 

Preparation (~3 hr)

  1. Remove prime rib from refrigerator an hour before roasting

  2. Preheat oven to 500F and prepare meat on a roasting rack/pan

  3. Roast at 500F for 20 mins (For bone-in roast for 30 mins instead, bone side down)

  4. For roasts smaller than 5 lbs, lower to 350 for 12 mins / lb

  5. For roasts larger than 5lbs, lower  to 325F for 12 mins / lb. Roughly an hour for 5 lbs. 

  6. Remove roast  from oven and wrap it in foil. Let it rest for 30 mins. 

Tips

Do not poke the meat at all or the juices will leak. Trust the meat will be done after resting.
