Cauliflower Mike-Nuggets

I can’t take credit for this recipe, it was adapted by an original from stronger.com. What I’ve done is add some cauliflower rice for bulk and some cheese flavor. It’s a favorite with the kids!

Makes 25 nuggets, 30 calories per nugget

Ingredients

  • 1 lb ground chicken breast

  • 6 oz fresh cauliflower rice (you can skip this and double chicken if you prefer)

  • 1 egg, beaten

  • 1 packet of Kraft crunchy pretzel shake and bake

Directions

  1. Preheat oven to 400F or air fryer to 390F.

  2. Mix the chicken, cauliflower rice and beaten egg together in a large bowl

  3. Pour the shake and bake into a wide bowl

  4. Scoop heaped tablespoons of chicken mix onto the shake and bake mixture. Flatten it and flip on both sides to coat evenly.

  5. Line a baking tray with a cooling rack. And top with parchment paper.

  6. Place nuggets on the baking tray. You might need to do it in two batches.

  7. Bake or air fry for 15 mins. Check for doneness. Best eaten hot.

Tips

Airfrying is the way to go!!! Sooo crispy all round.

If you’re gonna freeze it, you can reheat in air fryer for 5 minutes.
